My readers who are also members of MQResource have already seen this recipe.
As a warning (based on feedback from MQR members), this recipe is quite tasty, but the visual aesthetic of this dish is….hmmm….well, quite frankly: it looks like mush.
Now, if I haven’t driven you off with that warning, here’s what you need:
Cheesy Crockpot Chicken and Rice
1 cup long-grain rice (I use Uncle Ben’s)
3 cups water
1-2 cups of shredded Cheddar cheese (how cheesy do you want it?)
1 tsp. onion powder
1/4 tsp. garlic powder (or a couple of shakes of the container….)
2 tsp. chicken bouillon granules
1 can Cream of Chicken soup
10-12 frozen boneless skinless chicken breast tenderloins
Dump everything but the chicken in the Crockpot. Stir it together. Add the FROZEN chicken tenderloins, pushing them down into the rice mixture.
Cook on Low for approximately 8-10 hours.
Stir before serving. (I usually check it on it partway through the day and stir at least once during the day…….)
I usually serve this with broccoli, my boys like to mix the broccoli in with the rice. I’ve tried cooking the broccoli in the Crockpot, along with everything else, but that overcooks the broccoli…
